Ideal for family meals or entertaining, it is quick to prepare, versatile, and satisfying.

Ingredients

Scale

Chicken and Seasoning

  • 1 whole chicken (about 34 pounds)
  • Olive oil (for rubbing and drizzling)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 34 garlic cloves, minced
  • Fresh thyme (a few sprigs)
  • Fresh rosemary (a few sprigs)

Apple Cider Glaze

  • 1/2 cup apple cider vinegar (natural)
  • 1/4 cup honey (natural)
  • 1/2 cup apple juice (natural)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare the Chicken: Remove any excess fat from the chicken and pat it dry thoroughly with paper towels to ensure crispy skin. Season generously with salt and freshly ground black pepper all over. Mince the garlic and chop the fresh thyme and rosemary. Gently loosen the skin over the breasts and rub in a little olive oil, minced garlic, and chopped herbs beneath the skin to deepen the flavor.
  2. Roast the Chicken: Preheat your oven to 425°F (220°C). Place the chicken breast-side up in a roasting pan or oven-safe skillet. Drizzle olive oil over the entire chicken to promote browning. Place any remaining herbs inside the cavity for aroma. Roast for 50 to 60 minutes or until the internal temperature reaches 165°F (74°C) and the skin turns golden and crispy.
  3. Make the Apple Cider Glaze: While the chicken roasts, combine apple cider vinegar, honey, apple juice, vegetarian Worcestershire sauce, and natural gelling agent in a saucepan. Stir over medium heat until the mixture thickens to a sticky glaze, about 5 to 7 minutes. Remove from heat and keep warm.
  4. Glaze and Rest the Chicken: During the last 10 minutes of roasting, brush the chicken generously with the apple cider glaze, building a glossy and flavorful coating. Once cooked, take the chicken out of the oven and let it rest for 10 minutes before carving to allow juices to redistribute.

Notes

  • Pat the chicken skin dry thoroughly before roasting for extra crispiness.
  • Use a meat thermometer to ensure the chicken is perfectly cooked without drying out.
  • Brush the glaze multiple times during the final roasting stage to build rich flavor and shine.
  • Rest the chicken before carving to improve juiciness and glaze setting.
  • Save pan drippings to make a quick herb gravy with olive oil.
