Ingredients

Scale

Filling Ingredients

  • 6 cups fresh apples, peeled, cored, and sliced (Granny Smith or Fuji recommended)
  • 2 tablespoons lemon juice (natural)
  • 3/4 cup brown sugar (natural) or maple syrup (natural) as substitution
  • 1 teaspoon cinnamon (natural flavoring)
  • 1/4 teaspoon nutmeg (natural flavoring)
  • 1/4 teaspoon salt
  • 1 teaspoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon all-purpose flour
  • 1 tablespoon natural gelling agent (such as pectin or agar)

Crust Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup plant-based butter, cold and cubed
  • 1/4 teaspoon salt
  • 4 to 6 tablespoons cold water

Instructions

  1. Prepare the Apples: Peel, core, and evenly slice the fresh apples to ensure uniform cooking. Toss the slices with lemon juice to prevent browning. In a large bowl, mix the apples with brown sugar, cinnamon, nutmeg, salt, vegetarian Worcestershire sauce, natural gelling agent, and flour until well combined to form the filling.
  2. Make the Crust Dough: In a mixing bowl, combine all-purpose flour and salt. Cut in the plant-based butter using a pastry blender or fingers until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing gently until the dough just comes together. Avoid overworking the dough. Wrap in plastic and chill in the refrigerator for at least 30 minutes.
  3. Assemble the Pie: Roll out half of the chilled dough on a floured surface and gently fit it into a pie dish. Pour the prepared apple filling evenly into the crust. Roll out the remaining dough and place it over the filling. Crimp the edges to seal and cut small vents on top to allow steam to escape during baking.
  4. Bake to Perfection: Preheat the oven to 375°F (190°C). Bake the pie for 50 to 60 minutes or until the crust is golden brown and the filling is bubbling. If the edges brown too quickly, cover them with foil halfway through baking to prevent burning.

Notes

  • Use a mix of tart and sweet apples for balanced flavor and texture.
  • Keep dough chilled to make it easier to handle and ensure a flaky crust.
  • Let dough rest in the refrigerator before baking to reduce shrinkage and maintain tenderness.
  • Cut vents on top of the pie to release steam and avoid a soggy crust.
  • Watch the baking time closely; cover edges if they start to brown too quickly.
  • Use freshly ground cinnamon and nutmeg for a more vibrant taste.
