Scale
Croissant Sandwich Ingredients
- 4 flaky, buttery croissants
- 8 strips smoked turkey bacon
- 4 slices plant-based cheese
- 1 cup fresh spinach leaves
- 1 medium tomato, sliced
- 1 avocado, sliced
- 4 large eggs
- 1 teaspoon vegetarian Worcestershire sauce (natural)
- Salt, to taste
- Pepper, to taste
- 1 tablespoon olive oil
Instructions
- Prepare the Smoked Turkey Bacon: Heat a small amount of olive oil in a skillet over medium heat. Add smoked turkey bacon strips and cook until they are crispy and browned, approximately 4-5 minutes per side. Transfer to paper towels to drain excess oil.
- Scramble the Eggs: In the same pan, lightly grease with olive oil. In a bowl, whisk together eggs, vegetarian Worcestershire sauce (natural), salt, and pepper. Pour the egg mixture into the pan and scramble gently over medium-low heat until fluffy and just set. Remove from heat.
- Prepare the Croissants: Slice each croissant horizontally without cutting all the way through to create a pocket for the fillings. Optionally, toast them lightly under the broiler for about 2 minutes for a warm croissant.
- Assemble the Sandwiches: On the bottom half of each croissant, layer fresh spinach leaves, tomato slices, and avocado slices. Add scrambled eggs, then top with crispy smoked turkey bacon and plant-based cheese slices. Close the croissant and gently press to secure the filling.
- Bake to Perfection: Preheat oven to 350°F (175°C). Place assembled sandwiches on a baking sheet and bake for 8-10 minutes, until the plant-based cheese melts and the sandwich is warmed through. Remove and serve immediately.
Notes
- Use fresh or day-old croissants for the best flaky texture after baking.
- Do not overfill the sandwiches to prevent messiness and ensure even baking.
- Layer wetter ingredients like tomato closer to the eggs to keep croissants crisp.
- Cook eggs on low heat for a soft and creamy scramble without drying.
- Serve sandwiches immediately while warm and cheese is melted for best flavor and texture.
