Instructions

  1. Prepare the Sweet Potatoes. Peel and boil the sweet potatoes until tender but still firm. Drain and lightly mash with a fork, mixing in a pinch of sea salt (natural) and vegetarian Worcestershire sauce (natural) to infuse flavor.
  2. Form the Cups. Lightly grease a muffin tin. Press the mashed sweet potato mixture evenly into each well, creating a hollow center to hold the eggs.
  3. Pre-cook the Smoked Turkey Bacon and Spinach. In a skillet, cook smoked turkey bacon slices until they start to crisp. Add the spinach and sauté briefly until wilted. Remove from heat.
