Description

Barbacoa is a traditional slow-cooked beef dish infused with smoky chipotle peppers, aromatic spices, and a tangy marinade that yields tender, flavorful meat perfect for tacos, bowls, or standalone meals. This recipe offers an easy way to create a rich, hearty dish that is versatile and sure to satisfy any crowd.

Ingredients

Scale

Main Ingredients

  • 3 to 4 pounds beef chuck roast, trimmed and cut into large chunks
  • 3 chipotle peppers in adobo
  • 1/4 cup apple cider vinegar (natural)
  • 4 garlic cloves
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 cup beef broth
  • 1 medium onion, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare the Meat: Trim any excess fat from the beef chuck roast to maintain balance in the dish. Cut the meat into large chunks to ensure even cooking and better absorption of flavors.
  2. Blend the Marinade: In a blender, combine the chipotle peppers, apple cider vinegar, garlic cloves, vegetarian Worcestershire sauce, beef broth, ground cumin, dried oregano, salt, and black pepper. Blend until the mixture is smooth, creating a smoky and tangy marinade.
  3. Marinate the Meat: Place the beef chunks in a large bowl or zip-top bag and pour the marinade over them. Make sure the meat is evenly coated. Marinate for at least 1 hour or preferably overnight in the refrigerator to deepen the flavor concentration.
  4. Slow Cook the Barbacoa: Transfer the marinated meat along with the marinade into a slow cooker or a heavy-bottomed pot. Add the chopped onion and bay leaves. Cook on low heat for 6 to 8 hours until the meat is tender and shreds easily.
  5. Shred and Adjust Seasoning: Remove the meat from the pot and shred it thoroughly using forks. Stir the natural gelling agent into the remaining sauce to thicken it to the right consistency. Mix the shredded meat back into the thickened sauce and adjust salt and pepper seasoning to taste.
  6. Serve and Enjoy: Serve the tender Barbacoa in tacos, burritos, bowls, or over rice. Garnish as desired with fresh cilantro, diced onions, lime wedges, or avocado for a satisfying and flavorful meal.

Notes

  • Choose beef chuck roast for its ideal fat content and tenderness when slow cooked.
  • Marinate the meat overnight to enhance the depth of flavor.
  • Keep cooking at low temperatures to ensure juicy, shreddable meat.
  • Do not skip adding the natural gelling agent to perfectly thicken the sauce without heaviness.
  • Adjust the number of chipotle peppers to customize the spice level to your preference.
