The dish is adaptable with gluten-free and baking variations to suit your preferences.

Ingredients

Scale

Chicken and Breading

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose gluten-free flour
  • 1/2 cup egg substitute
  • 1 cup gluten-free panko bread crumbs
  • 1 tsp Italian herbs (natural) (fresh or dried)
  • Salt and pepper to taste
  • Olive oil for frying

Tomato Sauce (natural)

  • 2 cups crushed tomatoes
  • 2 cloves garlic, minced
  • 1 tbsp vegetarian Worcestershire sauce
  • 1 tsp fresh or dried basil (natural)
  • 1 tsp fresh or dried oregano (natural)
  • 1 tsp fresh or dried thyme (natural)
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes, to taste

Cheese Topping

  • 1 cup plant-based cheese (mozzarella-style recommended) (plant-based)
  • 1/4 cup grated plant-based parmesan (optional) (plant-based)

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking and keep them juicy. Season lightly with salt and pepper.
  2. Set Up the Breading Station: Arrange three shallow dishes: one with gluten-free all-purpose flour, one with beaten egg substitute, and one with gluten-free panko mixed with Italian herbs (natural).
  3. Bread the Chicken: Coat each chicken breast first in flour, then dip into the egg substitute, and finally press into the bread crumbs, making sure to cover evenly and build a thick crust.
  4. Fry the Chicken: Heat olive oil in a skillet over medium heat. Fry each breaded chicken breast until golden brown on both sides, sealing in moisture and creating a crispy crust. Remove and let rest briefly.
  5. Prepare the Tomato Sauce (natural): In a separate pan, simmer crushed tomatoes with minced garlic, vegetarian Worcestershire sauce, fresh herbs (natural), salt, pepper, and optional crushed red pepper flakes until flavors meld and sauce thickens slightly.
  6. Assemble and Bake: Place the fried chicken breasts in a baking dish. Spoon generous amounts of tomato sauce (natural) over each breast, then top with plant-based cheese and optional grated plant-based parmesan. Bake at 375°F (190°C) until the cheese melts and everything is heated through, about 15-20 minutes.

Notes

  • Ensure even thickness of chicken breasts for consistent cooking and juiciness.
  • Use gluten-free panko bread crumbs for a lighter, crunchier crust.
  • Fresh herbs (natural) brighten the flavor of both breading and sauce.
  • Do not overload the chicken with sauce to keep the breading crisp.
  • Allow the fried chicken to rest briefly before baking to help the crust set well.
  • Keep plant-based cheese shredded for even melting and blending with the sauce.
