Ingredients
Scale
Chicken Filling
- 1 lb chicken breast, cut into small bite-sized pieces
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp vegetarian Worcestershire sauce (natural)
Quesadilla Assembly
- 4 large flour tortillas
- 1 1/2 cups plant-based cheese, shredded
- Olive oil, for cooking
Instructions
- Prepare the Chicken Filling: Cut chicken breast into small bite-sized pieces. Heat olive oil in a skillet over medium heat. Add chicken, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Stir well to coat chicken evenly with spices. Cook for 6-8 minutes until golden and cooked through. Stir in vegetarian Worcestershire sauce (natural) at the end.
- Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle a generous layer of plant-based cheese over half of the tortilla. Spread the cooked chicken mixture over the cheese. Add a little more plant-based cheese on top of the chicken to help it bind. Fold the tortilla over to form a half-moon shape.
- Cook the Quesadillas: Heat a clean skillet or non-stick pan over medium heat and drizzle a little olive oil. Place the assembled quesadilla in the pan and cook for 3-4 minutes until the bottom is golden and crispy. Carefully flip and cook the other side until cheese melts and the tortilla is golden brown and crispy.
- Slice and Serve: Remove quesadilla from skillet and place on a cutting board. Let cool slightly, then slice into wedges using a sharp knife or pizza cutter. Serve warm with your favorite dips or garnishes.
Notes
- Cut chicken into uniform pieces for even cooking and juicy bites.
- Do not overfill quesadillas to allow easy folding and flipping.
- Cook on medium heat to prevent burning the tortilla and ensure cheese melts properly.
- Use a weighted pan or press gently on the quesadilla while cooking to help ingredients bond.
- Let quesadillas rest briefly after cooking to avoid filling spilling out when sliced.
