  • 1 tbsp vegetarian Worcestershire sauce (natural)

Quesadilla Assembly

  • 4 large flour tortillas
  • 1 1/2 cups plant-based cheese, shredded
  • Olive oil, for cooking

Instructions

  1. Prepare the Chicken Filling: Cut chicken breast into small bite-sized pieces. Heat olive oil in a skillet over medium heat. Add chicken, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Stir well to coat chicken evenly with spices. Cook for 6-8 minutes until golden and cooked through. Stir in vegetarian Worcestershire sauce (natural) at the end.
  2. Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle a generous layer of plant-based cheese over half of the tortilla. Spread the cooked chicken mixture over the cheese. Add a little more plant-based cheese on top of the chicken to help it bind. Fold the tortilla over to form a half-moon shape.
  3. Cook the Quesadillas: Heat a clean skillet or non-stick pan over medium heat and drizzle a little olive oil. Place the assembled quesadilla in the pan and cook for 3-4 minutes until the bottom is golden and crispy. Carefully flip and cook the other side until cheese melts and the tortilla is golden brown and crispy.
  4. Slice and Serve: Remove quesadilla from skillet and place on a cutting board. Let cool slightly, then slice into wedges using a sharp knife or pizza cutter. Serve warm with your favorite dips or garnishes.
