Ingredients
Scale
Chicken
- 400g boneless chicken breast or thighs, cut into bite-sized pieces
Teriyaki Sauce (natural)
- 1/4 cup soy sauce (natural)
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp grape juice
- 1/2 tsp natural gelling agent (optional)
Noodles & Oil
- 200g rice noodles or egg noodles
- 2 tbsp vegetable oil
Aromatics & Garnishes
- 3 green onions, sliced
- 1 tbsp sesame seeds (plant-based)
- 1 tsp fresh garlic, minced
- 1 tsp fresh ginger, grated
Optional Vegetables
- 1/2 cup bell peppers, sliced
- 1/2 cup snap peas
Instructions
- Prepare the noodles: Cook the noodles according to the package instructions until just tender. Drain and toss with a little vegetable oil to prevent sticking. Set aside.
- Cook the chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the bite-sized chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.
- Make the teriyaki sauce (natural): In the same pan, combine soy sauce (natural), brown sugar, minced garlic, grated fresh ginger, and grape juice. Stir well and bring to a simmer. Add natural gelling agent if desired and allow the sauce to thicken slightly.
- Bring it all together: Return the cooked chicken to the pan, add the cooked noodles, and optional vegetables if using. Toss everything together thoroughly so the noodles and chicken are evenly coated with the luscious teriyaki sauce.
- Add garnishes: Sprinkle sliced green onions and sesame seeds (plant-based) on top just before serving to add extra flavor and crunch.
Notes
- Use fresh ginger and garlic for a vibrant, aromatic sauce.
- Do not overcook noodles; keep them al dente for ideal texture.
- Prepare all ingredients before cooking to streamline the process.
- Taste and adjust the sweetness or saltiness of the teriyaki sauce as needed.
- Cut chicken pieces uniformly to ensure even cooking and juiciness.
