Description

Cowboy Caviar is a fresh, vibrant, and zesty bean and vegetable salad featuring smoked turkey bacon, black beans, corn, cherry tomatoes, bell peppers, and a tangy lime dressing. This healthy and protein-packed appetizer is quick to prepare, easy to customize, and perfect served chilled with tortilla chips, tacos, or as a salad topping.

Ingredients

Scale

Vegetables and Beans

  • 1 cup black beans, rinsed and drained
  • 1 cup sweet corn kernels, fresh or canned
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, seeded and minced

Protein

  • 4 slices smoked turkey bacon, cooked and crumbled

Dressing

  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Vegetables: Rinse and drain the black beans and corn thoroughly. Dice the red and green bell peppers, halve the cherry tomatoes, and finely chop the red onion, cilantro, and jalapeño to prepare all fresh ingredients.
  2. Cook the Smoked Turkey Bacon: In a skillet over medium heat, cook the smoked turkey bacon until it is crispy and golden brown. Remove from heat and crumble into bite-sized pieces.
  3. Combine Fresh Ingredients: In a large serving bowl, gently toss together the black beans, corn, cherry tomatoes, bell peppers, red onion, cilantro, jalapeño, and crumbled smoked turkey bacon to distribute evenly.
  4. Make the Dressing: In a small bowl, whisk together fresh lime juice, olive oil, vegetarian Worcestershire sauce (natural), salt, and pepper. Pour the dressing over the mixed ingredients and toss gently to coat all components.
  5. Chill and Serve: Refrigerate the Cowboy Caviar for 30 minutes to allow flavors to blend. Serve chilled for the freshest and most flavorful experience.

Notes

  • Use fresh ingredients to enhance flavor and texture.
  • Drain canned beans and corn well to avoid excess moisture.
  • Adjust jalapeño amount to balance the spice level.
  • Marinate by chilling to deepen flavor profiles.
  • Serve cold or at room temperature to highlight freshness.
  • Optional garnishes: extra chopped cilantro or thinly sliced green onions.
  • For variations: Add diced avocado, extra jalapeños or cayenne for heat, grilled vegetables instead of raw peppers, cooked quinoa for a main dish, or replace turkey bacon with smoked paprika or plant-based bacon alternatives.
