Description

Crab And Shrimp Seafood Bisque is a comforting and indulgent dish combining fresh seafood, smoky turkey bacon, and creamy plant-based cream. This rich and velvety bisque blends sweet crab meat and tender shrimp with aromatic vegetables, natural gelling agents, and fragrant herbs, creating a luscious, satisfying meal perfect for any occasion.

Ingredients

Scale

Seafood

  • 1 cup fresh crab meat
  • 1 cup raw shrimp, peeled and deveined

Vegetables and Aromatics

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, finely chopped
  • 2 celery stalks, finely chopped

Meat Substitute

  • 4 slices smoked turkey bacon, chopped

Liquids and Sauces

  • 2 tbsp tomato paste (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar
  • 4 cups seafood stock
  • 3/4 cup plant-based cream

Herbs and Seasonings

  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt, to taste
  • Freshly ground black pepper, to taste

Other

  • 1 tbsp plant-based butter
  • 1 tsp natural gelling agent

Instructions

  1. Prepare the base: Finely chop onions, carrots, celery, and garlic. In a large pot, melt plant-based butter over medium heat. Sauté the vegetables until softened and fragrant, about 5 minutes, to build a naturally sweet and aromatic foundation for the bisque.
  2. Add smoked turkey bacon and deglaze: Stir in chopped smoked turkey bacon and cook for 3 to 4 minutes until slightly crisp. Pour in apple cider vinegar to deglaze the pot, scraping up any bits stuck to the bottom for enhanced depth of flavor.
  3. Build flavors with tomato paste and seasonings: Mix in tomato paste (natural), vegetarian Worcestershire sauce (natural), fresh thyme, and bay leaves. Cook for 2 minutes to allow the tomato paste to lightly caramelize and herbs to release their fragrance.
  4. Add seafood stock and natural gelling agent: Pour in seafood stock and sprinkle the natural gelling agent, stirring to incorporate. Bring to a gentle simmer and cook for about 20 minutes, allowing flavors to meld and bisque to thicken slightly.
  5. Blend and strain the bisque: Remove thyme stems and bay leaves. Carefully blend the soup until smooth using an immersion blender or regular blender in batches. Strain through a fine-mesh sieve for an ultra-silky texture.
  6. Add seafood and plant-based cream: Return bisque to the pot and stir in crab meat and shrimp. Simmer gently until seafood is cooked, about 5 minutes. Fold in plant-based cream to finish with creamy richness.

Notes

  • Use the freshest crab and shrimp available for optimal flavor and texture.
  • Simmer gently once seafood is added to keep it tender and juicy.
  • Adjust salt and pepper gradually, tasting frequently to balance flavors.
  • Add the natural gelling agent early to ensure smooth thickening without clumps.
  • Let the bisque rest slightly before serving to maximize flavor development.
