Instructions
- Prepare the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente according to package instructions. Reserve 1 cup of pasta water before draining. Drain pasta and set aside.
- Cook the Shrimp and Bacon: Heat olive oil in a large skillet over medium heat. Add sliced smoked turkey bacon and cook until crispy, then remove and set aside. Add seasoned shrimp (salt and pepper) to the skillet and sauté 2-3 minutes per side until pink and opaque. Remove shrimp to prevent overcooking.
- Build the Sauce: In the same skillet, add more olive oil if needed and sauté minced garlic gently until fragrant but not browned. Pour in grape juice to deglaze the pan, scraping browned bits. Stir in plant-based heavy cream, vegetarian Worcestershire sauce, and natural gelling agent. Simmer and thicken sauce for 3-4 minutes.
- Combine and Finish: Return cooked pasta, crispy bacon, and shrimp to the skillet. Toss to evenly coat with sauce. Adjust sauce consistency by adding reserved pasta water gradually if too thick. Stir in plant-based cheese to melt and enrich sauce. Sprinkle fresh parsley on top before serving.
