Ingredients

Scale

Lasagna Base

  • 912 lasagna noodles (no-boil or regular)
  • 2 cups tomato sauce (natural)
  • 8 oz smoked turkey bacon, diced
  • 2 cups plant-based cheese (shredded or sliced)
  • 2 cups fresh or frozen spinach leaves

Aromatics and Seasoning

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Binding Agent

  • 1/2 teaspoon natural gelling agent

Instructions

  1. Prepare the Smoky Turkey Bacon and Sauce: Heat olive oil in a pan over medium heat. Fry diced smoked turkey bacon until crisp, then remove and set aside. In the same pan, sauté finely chopped onions and minced garlic until fragrant and translucent. Add tomato sauce (natural), dried basil, oregano, salt, and black pepper. Let the sauce simmer gently on low heat to develop rich flavors.
  2. Cook and Layer the Noodles: If using regular lasagna noodles, cook them al dente according to package instructions, drain, and rinse to prevent sticking. Spread a thin layer of tomato sauce on the bottom of your baking dish to prevent sticking, then evenly place your first layer of noodles over the sauce.
  3. Add Layers of Sauce, Turkey Bacon, and Cheese: Spread a generous layer of tomato sauce over the noodles. Sprinkle the crispy smoked turkey bacon pieces and scatter fresh spinach leaves evenly on top. Add shredded plant-based cheese and a small pinch of natural gelling agent to help bind the layers.
  4. Repeat and Finish with Cheese: Continue layering noodles, tomato sauce, smoked turkey bacon, spinach, and plant-based cheese until all ingredients are used. End with a thick, generous topping of plant-based cheese to create a golden, bubbly crust when baked.
  5. Bake to Perfection: Cover the assembled lasagna with foil. Place in a preheated oven at 375°F (190°C) and bake for 35 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese topping is golden and bubbling. Allow the lasagna to rest for 10 minutes before slicing and serving to set layers and enhance flavors.

Notes

  • Prep ahead by assembling the lasagna a day before to deepen flavors and save time on the day of cooking.
  • Let the lasagna rest after baking for cleaner slices and better texture.
  • Use a thicker tomato sauce (natural) to prevent watery layers and soggy noodles.
  • Distribute plant-based cheese evenly between layers for consistent melting and flavor.
  • Finish with fresh herbs like basil or parsley sprinkled on top after baking for brightness.
