Pasta and Sauces

  • 200g pasta (fettuccine or penne recommended)
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1/4 cup reserved pasta water

Oils and Fat

  • 2 tablespoons olive oil (natural)

Cheese and Seasonings

  • 1/2 cup plant-based cheese, grated or torn
  • Salt, to taste

Instructions

  1. Prepare the Ingredients: Clean and slice the mushrooms evenly. Finely chop the garlic, shallots, and fresh herbs. Boil salted water for cooking the pasta so it’s ready when the mushrooms are done.
  2. Cook the Pasta: Cook the pasta according to package instructions until al dente. Reserve one cup of the pasta water before draining to use later for adjusting the sauce consistency.
  3. Sauté the Mushrooms and Aromatics: Heat olive oil (natural) in a large pan over medium heat. Add garlic and shallots and sauté until fragrant and translucent. Then add the mushrooms and cook for 6-8 minutes until they release moisture and begin to brown, stirring occasionally.
  4. Build the Sauce: Stir in vegetarian Worcestershire sauce (natural), salt, and pepper. Add reserved pasta water as needed to create a light and silky sauce. Toss in the cooked pasta and mix gently to coat the noodles evenly.
  5. Finish With Plant-Based Cheese and Herbs: Sprinkle plant-based cheese over the pasta and toss gently until it melts and coats the pasta. Add fresh herbs last for brightness and serve immediately while warm.
