- 1/4 cup reserved pasta water

Instructions
- Prepare the Ingredients: Clean and slice the mushrooms evenly. Finely chop the garlic, shallots, and fresh herbs. Boil salted water for cooking the pasta so it’s ready when the mushrooms are done.
- Cook the Pasta: Cook the pasta according to package instructions until al dente. Reserve one cup of the pasta water before draining to use later for adjusting the sauce consistency.
- Sauté the Mushrooms and Aromatics: Heat olive oil (natural) in a large pan over medium heat. Add garlic and shallots and sauté until fragrant and translucent. Then add the mushrooms and cook for 6-8 minutes until they release moisture and begin to brown, stirring occasionally.
- Build the Sauce: Stir in vegetarian Worcestershire sauce (natural), salt, and pepper. Add reserved pasta water as needed to create a light and silky sauce. Toss in the cooked pasta and mix gently to coat the noodles evenly.
- Finish With Plant-Based Cheese and Herbs: Sprinkle plant-based cheese over the pasta and toss gently until it melts and coats the pasta. Add fresh herbs last for brightness and serve immediately while warm.
