  • Total Time: 1 hour 30 minutes
  • Yield: About 30 pretzel bites 1x
  • Diet: Vegetarian

Description

Soft, chewy Pretzel Bites stuffed with savory smoked turkey slices and melty plant-based cheese, wrapped in a tender golden pretzel dough. Perfect as a versatile snack for parties, game day, or a cozy treat at home, these bites deliver comfort and rich flavor with every delicious mouthful.

Ingredients

Scale

Dough

  • 3 1/2 cups all-purpose flour
  • 1 1/4 cups warm water (around 110°F / 43°C)
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 tbsp natural brown sugar
  • 1 tsp salt
  • 1 tbsp vegetarian Worcestershire sauce (natural)

Baking Soda Bath

  • 10 cups water
  • 2/3 cup baking soda

Filling & Topping

  • Smoked turkey slices (quantity as desired, about 6-8 slices)
  • Plant-based cheese, cubed (about 1 cup)
  • Coarse salt for sprinkling

Instructions

  1. Prepare the Dough: In a mixing bowl, combine warm water, active dry yeast, and natural brown sugar. Let sit for about 5 minutes until the mixture becomes bubbly. Add the flour, salt, and vegetarian Worcestershire sauce (natural). Stir until a dough forms. Transfer to a floured surface and knead gently for 5 to 7 minutes until smooth and elastic. Cover with a clean cloth and set in a warm area to rise until doubled in size, approximately 1 hour.
  2. Shape the Pretzel Bites: Punch down the risen dough to release air. Roll the dough into long ropes and cut into small bite-sized pieces. Flatten each piece slightly, place a slice of smoked turkey and a cube of plant-based cheese on top. Fold or roll the dough to enclose the filling completely, sealing the edges tightly to prevent cheese leakage during baking.
  3. Boil in Baking Soda Water: Bring a large pot of water to a boil and add baking soda. Carefully drop the pretzel bites into the boiling water in batches and boil for 20 to 30 seconds. Use a slotted spoon to remove and place the bites onto a parchment-lined baking sheet.
  4. Bake to Golden Perfection: Preheat the oven to 425°F (220°C). Sprinkle coarse salt on top of the pretzel bites. Bake for 12 to 15 minutes or until the exterior turns a rich golden brown. Remove from oven and let cool slightly before serving.

Notes

  • Avoid adding too much flour during kneading to keep the bites soft and chewy.
  • Use warm water around 110°F (43°C) to activate the yeast effectively without killing it.
  • Seal the edges well around the filling to prevent cheese from oozing out during baking.
  • Do not skip the baking soda water bath; it is key to achieving the authentic pretzel crust and chewy texture.
  • Allow the pretzel bites to cool for a few minutes after baking for the best flavor and temperature.
