Ingredients

Scale

Meat and Protein

  • 6 slices smoked turkey bacon, cut into bite-sized pieces
  • 2 large chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed

Vegetables

  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 bell peppers, chopped
  • 1 can (14.5 oz) diced tomatoes

Liquids and Sauces

  • 2 cups chicken broth (natural)
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil (natural)

Spices

  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

Garnish (optional)

  • Fresh cilantro, chopped

Instructions

  1. Prepare the Ingredients: Dice the onion, mince the garlic, chop the bell peppers, and cut the smoked turkey bacon into bite-sized pieces to ensure smooth cooking.
  2. Sauté the Bacon and Vegetables: Heat a splash of olive oil in a skillet. Cook the smoked turkey bacon until it releases its smoky aroma. Add the diced onion and minced garlic, sauté until translucent to build deep flavor layers for the chili.
  3. Combine in the Slow Cooker: Transfer the bacon and vegetable mixture to the slow cooker. Add the chicken breasts, diced tomatoes, black beans, chopped bell peppers, chili powder, cumin, smoked paprika, vegetarian Worcestershire sauce, chicken broth, and apple cider vinegar. Stir everything gently to blend all ingredients well.
  4. Cook Low and Slow: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and shreds easily.
  5. Shred the Chicken and Serve: Remove the chicken breasts from the slow cooker, shred them using two forks, then stir the shredded chicken back into the chili. Taste and adjust salt or spices as needed. Garnish with fresh cilantro if desired before serving.

Notes

  • Use freshly ground spices for enhanced flavor quality.
  • Do not skip sautéing the turkey bacon and vegetables to amplify aroma and depth.
  • Add apple cider vinegar towards the end of cooking to brighten flavors.
  • Check liquid levels during cooking and add more chicken broth if needed.
  • Let the chili rest for 10 minutes off heat before serving for best flavor melding.
