Ingredients

Scale

Shrimp Marinade

  • 12 large fresh shrimp, peeled and deveined
  • 2 tablespoons vegetarian Worcestershire sauce
  • 1 tablespoon natural soy sauce
  • 1 teaspoon toasted sesame oil

Sushi Rice

  • 1 cup sushi rice
  • 2 tablespoons natural rice vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt

Spicy Mayo (natural)

  • 1/4 cup plant-based mayo (natural)
  • 12 tablespoons natural chili sauce
  • a pinch of natural gelling agent

Fresh Ingredients

  • 1 ripe avocado, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 2 green onions, thinly sliced

Garnishes

  • 1 tablespoon toasted sesame seeds
  • natural soy sauce, for drizzling
  • additional sliced green onions, for garnish

Instructions

  1. Prepare the Shrimp: Marinate the peeled and deveined shrimp in vegetarian Worcestershire sauce, natural soy sauce, and toasted sesame oil. Let them sit to absorb the flavors while you prepare the other ingredients.
  2. Cook the Sushi Rice: Rinse the sushi rice thoroughly under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix in natural rice vinegar, sugar, and salt. Allow the rice to cool to room temperature.
  3. Make Spicy Mayo (natural): In a small bowl, blend plant-based mayo (natural) with natural chili sauce and a pinch of natural gelling agent to achieve desired consistency. Adjust the amount of chili sauce to control the spice level.
  4. Slice Fresh Ingredients: Thinly slice avocado, cucumber, and green onions. Prepare any additional desired veggies or fruits for variation.
  5. Sauté the Shrimp: Heat a non-stick pan over medium heat. Cook the marinated shrimp for 2-3 minutes on each side until they turn pink and firm. Remove from heat and allow to cool slightly.
  6. Assemble the Sushi Stacks: Using a round mold or clean ramekin, start with a spoonful of sushi rice as the base layer. Add a layer of shrimp, followed by slices of avocado and cucumber. Drizzle with spicy mayo (natural) and sprinkle sliced green onions. Repeat layers if desired, pressing gently to hold the stack together. Carefully remove the mold to reveal the stack.
  7. Garnish and Serve: Top each stack with toasted sesame seeds, a light drizzle of natural soy sauce, and additional chopped green onions for an elegant and flavorful finish.

Notes

  • Properly rinsing sushi rice removes excess starch to prevent clumping.
  • Use cooled rice to help stacks hold shape without becoming mushy.
  • Avoid overcooking shrimp for tender texture and rich flavor.
  • Press layers lightly to keep stacks neat without squashing.
  • Customize by swapping vegetables or adding fresh herbs like cilantro.
