Description

These easy Tomato Tartlets combine fresh, vibrant ripe tomatoes with crispy smoked turkey bacon and melty plant-based cheese on a flaky puff pastry base. Perfect as an appetizer or snack, they offer a harmonious blend of savory, smoky, and creamy flavors with a delightful texture, suitable for any occasion.

Ingredients

Tomato Tartlets Ingredients

  • Fresh ripe tomatoes, firm and juicy, sliced evenly
  • Smoked turkey bacon, chopped into small pieces
  • Plant-based cheese, grated or sliced
  • Pre-made puff pastry, cut into small squares or circles
  • Garlic (natural), minced
  • Fresh basil leaves, torn
  • Olive oil (natural), for drizzling
  • Vegetarian Worcestershire sauce (natural), a splash
  • Natural gelling agent (optional), for setting tomato topping
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Prepare your ingredients: Wash and slice the fresh tomatoes evenly. Chop the smoked turkey bacon into small pieces. Grate or slice the plant-based cheese. Mince the garlic (natural) and tear fresh basil leaves to set aside for topping.
  2. Preheat the oven and ready the pastry: Set your oven to 400 degrees Fahrenheit (about 200 degrees Celsius). Unroll the puff pastry and cut it gently into small squares or circles depending on your preferred tartlet shape. Place them on a parchment-lined baking sheet.
  3. Cook bacon and tomatoes: In a skillet over medium heat, cook the smoked turkey bacon until crispy, then remove and drain on paper towels. Lightly sauté the tomato slices with minced garlic (natural) and a splash of vegetarian Worcestershire sauce (natural) to soften and concentrate the flavors.
  4. Assemble your Tomato Tartlets: Layer the cooked bacon bits on the pastry squares, followed by a spoonful of the tomato mixture. Top generously with plant-based cheese and sprinkle fresh basil leaves. Drizzle olive oil (natural) and season with sea salt and freshly cracked black pepper.
  5. Bake until golden and bubbly: Bake the tartlets in the preheated oven for 15-18 minutes until the pastry is golden brown and the plant-based cheese has melted and is bubbly. If using a natural gelling agent, ensure it sets during baking.
  6. Serve warm and enjoy: Remove from the oven and allow to cool slightly, then serve warm to fully enjoy the blend of flavors and textures.

Notes

  • Choose firm tomatoes to prevent soggy bases.
  • Keep puff pastry chilled until baking for better puff and flakiness.
  • Pre-cook bacon well to ensure crisp texture and reduce grease.
  • Add fresh herbs like basil after baking for vibrant color and aroma.
  • Use salt sparingly as bacon and vegetarian Worcestershire sauce add umami and saltiness.
