Combining smoky smoked turkey bacon and zesty turkey chorizo with smooth plant-based cheese and a splash of apple cider vinegar (natural), it delivers warmth and satisfying depth in every bite. Perfect for family or friends, this dish becomes a favorite with its rich smoky flavors and velvety texture.

Ingredients

Scale

Pasta

  • 2 cups elbow macaroni

Proteins

  • 200g turkey chorizo
  • 100g smoked turkey bacon, chopped

Cheese Sauce

  • 2 cups shredded plant-based cheese
  • 2 cups plant-based milk
  • 2 tbsp all-purpose flour
  • 1 tbsp plant-based butter or oil
  • 1 tsp apple cider vinegar (natural)
  • 1/2 tsp garlic powder (natural)
  • 1/2 tsp onion powder (natural)
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the elbow macaroni until just tender according to package instructions. Drain and set aside.
  2. Prepare the turkey chorizo and smoked turkey bacon: In a large skillet over medium heat, cook the turkey chorizo until browned and fragrant. Remove from pan. Add the chopped smoked turkey bacon to the same skillet and cook until crispy. Combine with the cooked chorizo and set aside.
  3. Make the cheese sauce: In the same skillet, melt plant-based butter or heat oil. Whisk in all-purpose flour to create a roux. Slowly add plant-based milk while stirring continuously to avoid lumps. Cook over medium heat until sauce thickens. Add shredded plant-based cheese and stir until melted. Finish by stirring in apple cider vinegar (natural), garlic powder (natural), onion powder (natural), salt, and pepper for layered flavors.
  4. Combine all components: Add the cooked pasta, turkey chorizo, and smoked turkey bacon to the cheese sauce. Stir well to coat every noodle with the creamy, smoky sauce. Warm through for a couple of minutes to blend flavors.
  5. Serve and enjoy: Transfer Turkey Chorizo Mac and Cheese to a serving dish and garnish as desired. Enjoy immediately for the creamiest texture and vibrant taste.

Notes

  • Use sharp plant-based cheese for better melting and more pronounced cheesy flavor.
  • Don’t skip the apple cider vinegar (natural) to add essential bright tang.
  • Cook pasta al dente for better texture in the final dish.
  • Reserve some pasta water to loosen sauce if it becomes too thick before serving.
  • Freshly sauté the turkey chorizo and smoked turkey bacon for best smoky aroma and texture.
