The Watermelon Cucumber Cooler is a refreshing, hydrating beverage that combines the juicy sweetness of watermelon with the crispness of cucumber and the brightness of natural lemon juice and apple cider vinegar. Enhanced by fresh mint and a natural sweetener, this cooler is easy to prepare and perfect for warm days, offering a vibrant, healthy drink that revitalizes and energizes.

Ingredients

Scale

Base Ingredients

  • 3 cups fresh watermelon, cubed
  • 1 large cucumber, peeled and sliced
  • A handful of fresh mint leaves
  • 2 tablespoons fresh lemon juice (natural)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sweetener of choice (maple syrup natural or agave syrup natural)
  • Ice cubes as needed

Instructions

  1. Prepare the Ingredients: Wash and chop the watermelon into cubes. Peel and slice the cucumber, removing seeds if preferred. Lightly crush the fresh mint leaves to release their oils. Squeeze fresh lemon juice to measure about 2 tablespoons.
  2. Blend the Base: Combine the watermelon cubes, cucumber slices, mint leaves, lemon juice, apple cider vinegar, and natural sweetener in a blender. Blend on high until smooth and fully combined.
  3. Strain for Smoothness: Pour the blended mixture through a fine mesh sieve or cheesecloth into a pitcher to remove pulp and achieve a silky texture, if desired.
  4. Chill and Serve: Add plenty of ice cubes into glasses or the pitcher. Pour the cooler over ice and garnish with mint leaves, cucumber slices, or watermelon cubes. Serve immediately for best freshness.

Notes

  • Choose ripe watermelon with deep color and sweet aroma for best flavor.
  • Use seedless watermelon or remove seeds for smoother texture.
  • Chill watermelon and cucumber before blending for extra refreshment.
  • Adjust sweetness according to taste, especially if watermelon is very ripe.
  • For a thicker texture, stir in a small amount of natural gelling agent dissolved in warm water before chilling.
