Ingredients
Noodles
- Udon Noodles: 200g thick, chewy noodles
Sauce
- Vegetarian Worcestershire Sauce (natural): 2 tbsp
- Soy Sauce (natural): 1 tbsp
- Apple Cider Vinegar: 1 tsp
Vegetables & Aromatics
- Shiitake Mushrooms: 100g sliced
- Carrots: 1 medium, julienned
- Green Bell Pepper: 1 small, sliced
- Garlic Cloves: 3, minced
- Scallions: 3, chopped (plus extra for garnish)
Other
- Sesame Oil: 2 tbsp
- Plant-based Butter: 1 tbsp
Instructions
- Prepare the Ingredients: Wash and slice the carrots, green bell pepper, scallions, and shiitake mushrooms into thin strips or bite-sized pieces. Mince the garlic cloves finely and set all aside for smooth cooking.
- Cook the Udon Noodles: Boil the udon noodles according to package instructions for 3 to 5 minutes until tender yet chewy. Drain and rinse under cold water to stop cooking and prevent sticking.
- Stir-Fry the Vegetables: Heat sesame oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté briefly until fragrant without browning. Add carrots, bell pepper, and shiitake mushrooms and stir-fry for 4 to 5 minutes until tender but still crisp and colorful.
- Combine Noodles and Sauce: Add cooked udon noodles to the skillet with vegetables. Pour in vegetarian Worcestershire sauce (natural), soy sauce (natural), and apple cider vinegar. Toss well to coat noodles evenly and blend flavors.
- Finish and Serve: Turn off heat and stir in plant-based butter and chopped scallions for a fresh and silky finish. Toss one last time, adjust seasoning if needed, and serve immediately while hot.
Notes
- Do not overcook noodles; keep them chewy by boiling just right and rinsing immediately.
- Use high heat for stir-frying to get a light sear on vegetables without steaming.
- Add sauces gradually and taste as you go for a balanced flavor.
- Use fresh vegetables for crispness and flavor contrast.
- Optional: add nuts or seeds for extra crunch.
