Ingredients
Scale
Pierogi Layer
- 1 lb pierogis (frozen or fresh)
- 1 tbsp olive oil
Beef and Bacon Mixture
- 12 oz lean ground beef
- 6 slices smoked turkey bacon
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning (natural)
- Salt and pepper to taste
- 1 tbsp vegetarian Worcestershire sauce (natural)
- 1 tbsp apple cider vinegar
Creamy Ranch Sauce
- 1 cup ranch dressing (natural)
- 1/4 cup water or plant-based milk
- 1 tsp natural gelling agent
Topping
- 1 1/2 cups plant-based Cheddar (plant-based), shredded
Instructions
- Prepare the bacon and beef mixture: In a large skillet, heat 1 tbsp olive oil over medium heat. Add smoked turkey bacon and cook until crispy. Remove and set aside, leaving the rendered fat in the pan. Add chopped onion and minced garlic to the skillet and sauté until translucent and fragrant. Add ground beef, season with salt, pepper, and Italian seasoning (natural), then cook until browned and cooked through, breaking up clumps with a spoon. Stir in vegetarian Worcestershire sauce (natural) and apple cider vinegar, then set aside.
- Cook the pierogis: Boil the pierogis according to package instructions until just tender. Drain well and toss lightly with 1 tbsp olive oil to prevent sticking and add richness.
- Make the creamy ranch sauce: In a saucepan, combine ranch dressing (natural) with water or plant-based milk. Sprinkle in the natural gelling agent and whisk continuously over low heat until the sauce thickens to a smooth consistency that will coat the pierogis without being runny.
- Assemble the bake: Preheat oven to 375°F (190°C). In a large baking dish, layer half of the cooked pierogis, then half of the beef and bacon mixture. Drizzle half of the creamy ranch sauce over the layers. Repeat with remaining pierogis and beef mixture. Finish with a generous layer of shredded plant-based Cheddar (plant-based) on top.
- Bake and serve: Bake uncovered for 25-30 minutes until the cheese is bubbly and golden. Let rest for a few minutes before serving to allow the layers to set. Garnish as desired and enjoy.
Notes
- Use fresh pierogis when possible for the best texture; frozen works well too.
- Boil pierogis just until tender to avoid mushiness.
- Render the turkey bacon fat thoroughly for extra flavor in the beef mixture.
- Generously layer the creamy ranch sauce to keep the bake moist and creamy.
- Let the bake rest before cutting to help it hold together and serve easily.
