For the Cheesy Mashed Potatoes

  • 2 lbs potatoes, peeled and chopped
  • 1/2 cup plant-based cheese, grated
  • 1/4 cup plant-based milk
  • 2 tbsp plant-based butter
  • Salt and pepper, to taste

Instructions

  1. Prepare the Potatoes: Peel and chop the potatoes into even chunks. Boil them in salted water until tender and easily mashable. Drain well when done.
  2. Cook the Chicken: Pat the chicken thighs dry, season with salt and pepper. In a hot pan, melt plant-based butter and sear the chicken until the skin is golden and crispy. Remove chicken from the pan and set aside.
  3. Make the Garlic Gravy: Using the same pan, add minced garlic and sauté until fragrant. Stir in vegetarian Worcestershire sauce (natural), apple cider vinegar, and water or vegetable broth. Gradually add the natural gelling agent to thicken the gravy, simmer gently until rich and luscious.
  4. Combine and Simmer: Return the chicken thighs to the pan, coat with the garlic gravy. Simmer on low heat until the chicken is fully cooked and flavors meld together.
  5. Mash the Potatoes: Mash the drained potatoes with plant-based butter, grated plant-based cheese, and a splash of plant-based milk. Season with salt and pepper to taste. Mash until creamy and fluffy.
