Ingredients

Scale

Dough Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 cup plant-based milk, warmed
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon salt

Filling Ingredients

  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 2 tablespoons vegetable oil (for spreading)

Glaze Ingredients

  • 1 cup powdered sugar (plant-based)
  • 1 teaspoon vanilla extract (natural)
  • 23 tablespoons plant-based milk
  • 1/2 teaspoon natural gelling agent

Instructions

  1. Prepare the Dough: Warm the plant-based milk until comfortably warm (about 110°F or 43°C). Stir in the active dry yeast and 1 tablespoon of brown sugar. Let it sit for 5 to 10 minutes until foamy. In a large bowl, combine the flour, salt, and remaining brown sugar. Add the yeast mixture and vegetable oil. Mix until a soft dough forms, then knead on a floured surface for 8 to 10 minutes until smooth and elastic.
  2. First Rise: Place the dough in a greased bowl and cover with a clean towel. Leave it in a warm spot for about 1 hour or until it has doubled in size.
  3. Roll Out and Fill: Punch down the risen dough and roll it into a large rectangle on a lightly floured surface. Spread a thin layer of vegetable oil over the dough, then sprinkle evenly with the brown sugar and cinnamon mixture.
  4. Shape the Buns: Roll the dough tightly starting from one long edge into a log shape. Cut the log into slices about 1 to 1.5 inches wide. Place the slices cut side up in a greased baking pan, leaving space for expansion.
  5. Second Rise and Bake: Cover the buns loosely with a towel and allow them to rise for 30 to 45 minutes. Preheat the oven to 180°C (350°F). Bake the buns for 20 to 25 minutes, until golden brown on top.
  6. Glaze and Serve: While the buns are baking, whisk together the powdered sugar, vanilla extract, plant-based milk, and natural gelling agent to create a smooth glaze. Drizzle the glaze generously over the warm buns.

Notes

  • Measure flour correctly by spooning it into your measuring cup and leveling it off to avoid dense dough.
  • Keep plant-based milk warmed to about 110°F (43°C) to activate yeast without killing it.
  • Roll the dough tightly to ensure cinnamon swirls stay intact and filling distributes evenly.
  • Do not skip the second rise; it improves the buns’ fluffiness and texture.
  • Apply glaze while buns are warm so it soaks in and creates a shiny finish.
