Ingredients
Scale
Chicken and Marinade
- 4 bone-in chicken thighs
- 2 tablespoons vegetarian Worcestershire sauce (natural)
- 1 tablespoon olive oil (natural)
- 2 cloves garlic, minced
- 1 tablespoon natural lemon juice
- Salt and pepper, to taste
Rice and Broth
- 1 cup long grain rice, uncooked
- 2 cups chicken broth
- Salt, a pinch
Tzatziki Sauce (plant-based)
- 1 medium cucumber, grated and squeezed to remove excess moisture
- 1 cup vegan yogurt (plant-based)
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon natural lemon juice
- 1 tablespoon olive oil (natural)
- Salt and pepper, to taste
Instructions
- Prepare the Tzatziki Sauce (plant-based): Grate the cucumber and squeeze out excess water using a kitchen towel. In a bowl, combine the grated cucumber, vegan yogurt (plant-based), minced garlic, chopped fresh dill, natural lemon juice, olive oil (natural), salt, and pepper. Mix well and set aside to allow the flavors to blend.
- Marinate the Chicken: In a separate bowl, combine the chicken thighs with vegetarian Worcestershire sauce (natural), olive oil (natural), minced garlic, natural lemon juice, salt, and pepper. Mix well to coat and let the chicken marinate while preparing the rice and baking dish.
- Assemble Ingredients in a Baking Dish: Evenly spread the uncooked long grain rice in a deep baking pan. Pour the chicken broth over the rice and season lightly with salt. Place the marinated chicken thighs on top of the rice. Cover tightly with aluminum foil to trap steam and moisture.
- Bake: Preheat the oven to 375°F (190°C). Bake the dish for 40 to 45 minutes, or until the chicken is fully cooked and the rice is tender. Remove the foil halfway through baking to check moisture levels and add a splash of warm chicken broth if needed. Recover and continue baking.
- Serve with Tzatziki Sauce (plant-based): Allow the baked chicken and rice dish to rest a few minutes after removing from the oven. Plate portions generously topped with the prepared creamy plant-based tzatziki sauce for a delightful contrast of warm and cool flavors.
Notes
- Use bone-in chicken thighs for juicier meat and richer rice flavor.
- Squeeze grated cucumber thoroughly to prevent watery tzatziki.
- Seal the baking dish well with foil to ensure proper steaming and cooking.
- Fresh herbs like dill and garlic are key for authentic flavor.
- If rice is undercooked, add warm broth gradually and re-cover the dish to finish cooking.
