Description

Goat Cheese Pasta combines creamy plant-based goat cheese with smoky turkey bacon, garlic, and a hint of apple cider vinegar to create a rich, savory comfort dish. Easy to make and adaptable to dietary preferences, this pasta offers a luscious sauce that coats your favorite noodles perfectly, enhanced by fresh parsley and subtle umami flavors.

Ingredients

Pasta

  • Pasta of your choice (spaghetti, fettuccine, or penne) – 12 oz (340 g)

Sauce and Flavorings

  • Plant-based goat cheese – 6 oz (170 g)
  • Apple cider vinegar (natural gelling agent) – 1 tbsp
  • Vegetarian Worcestershire sauce (natural) – 1 tsp
  • Black pepper – to taste
  • Salt – to taste

Other Ingredients

  • Smoked turkey bacon, chopped – 4 slices
  • Garlic cloves, finely minced – 3 cloves
  • Olive oil – 2 tbsp
  • Fresh parsley, chopped – 2 tbsp

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to package instructions until al dente. Drain the pasta, reserving one cup of the pasta water to help finish the sauce.
  2. Sauté the Smoked Turkey Bacon and Garlic: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the chopped smoked turkey bacon and cook until crispy. Mix in the finely minced garlic and sauté until fragrant, about one minute.
  3. Create the Creamy Goat Cheese Sauce: Lower the heat and add the plant-based goat cheese to the skillet, stirring gently to melt it. Pour in the apple cider vinegar (natural gelling agent) and a splash of the reserved pasta water, stirring constantly until the sauce reaches a smooth, creamy consistency.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss gently to coat every strand with the creamy goat cheese sauce. If the sauce seems thick, add a little more pasta water to loosen it up.
  5. Season and Garnish: Finish with a sprinkle of vegetarian Worcestershire sauce (natural), freshly ground black pepper, and salt. Toss in the chopped fresh parsley for color and freshness before serving.

Notes

  • Use reserved pasta water to create a silky sauce that clings perfectly to the pasta.
  • Cook pasta until slightly firm to hold up better under the creamy sauce.
  • Choose quality plant-based goat cheese for the best flavor and texture.
  • Cook bacon on medium heat to ensure crispness without burning or toughness.
  • Fresh herbs like parsley or basil elevate the dish, enhancing aroma and presentation.
