Instructions

  1. Prepare the ingredients: Chop smoked turkey bacon into small, bite-sized pieces and grate the plant-based cheese. In a mixing bowl, whisk the eggs together with grape juice, vegetarian Worcestershire sauce, salt, pepper, and the natural gelling agent until silky and smooth.
  2. Combine ingredients: Gently fold the smoked turkey bacon, grated cheese, and chopped fresh herbs into the egg mixture, ensuring an even distribution for balanced flavor.
  3. Fill the molds: Lightly spray silicone or metal egg bite molds to prevent sticking. Pour the mixture into each cavity, leaving about 1/4 inch of space for expansion during cooking.
  4. Set up your Instant Pot: Pour one cup of water into the Instant Pot and place the trivet inside to elevate the molds. Cover the filled molds tightly with foil to avoid condensation from dripping onto the egg bites, then carefully place the molds on the trivet.
  5. Cook and release pressure: Seal the Instant Pot lid and set the valve to sealing. Cook on high pressure for 8 minutes. When cooking is complete, allow a natural pressure release for 5 minutes before carefully switching to quick release.
