Ingredients
Scale
Pasta and Protein
- 12 oz tortellini (plant-based cheese-filled), fresh or refrigerated
- 6 slices smoked turkey bacon, cooked crisp and chopped
Vegetables and Herbs
- 1 cup cherry tomatoes, diced
- 1 cup cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil leaves, roughly torn
Dressing
- 3 tablespoons apple cider vinegar (natural)
- 1/4 cup extra virgin olive oil (natural)
- 1 teaspoon vegetarian Worcestershire sauce (natural)
- 1 clove garlic, minced
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil, then cook the tortellini according to package instructions until tender but firm. Drain and rinse under cold water to stop cooking and cool down the pasta.
- Prepare the Smoked Turkey Bacon: Meanwhile, fry the smoked turkey bacon in a skillet until crisp. Set aside on paper towels to drain excess fat; once cooled, chop into bite-sized pieces.
- Chop the Vegetables and Herbs: Dice the cherry tomatoes, cucumber, and red bell pepper. Finely chop the red onion. Roughly tear fresh basil leaves to release their fragrant oils and enhance the salad’s flavor.
- Whisk the Dressing: In a small bowl, whisk together apple cider vinegar (natural), extra virgin olive oil (natural), minced garlic, vegetarian Worcestershire sauce (natural), salt, and freshly ground black pepper until emulsified and flavorful.
- Combine Everything: In a large salad bowl, toss the cooled tortellini with chopped vegetables, smoked turkey bacon, and fresh basil. Pour the dressing over the salad and gently toss to coat evenly. Taste and adjust seasoning if needed.

- Chill salad for at least 30 minutes before serving to meld flavors.
