Description

Juicy Grilled Vietnamese Chicken, bursting with fresh herbs, vibrant spices, and a perfect charred exterior, locks in amazing flavors. Featuring a tender marinade made with vegetarian Worcestershire sauce, fish sauce, fresh lemongrass, and aromatic herbs, this grilled chicken is ideal for any meal and easy to prepare for all skill levels.

Ingredients

Scale

Chicken

  • 4 chicken thighs, skin-on

Marinade

  • 4 garlic cloves, finely minced
  • 2 stalks fresh lemongrass, finely minced
  • 1 inch fresh ginger root, finely minced
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp fish sauce
  • 2 tbsp brown sugar (natural)
  • 2 tbsp lime juice (natural)
  • 1/2 tsp black pepper

Garnish

  • Fresh cilantro leaves, chopped
  • Fresh mint leaves, chopped

Instructions

  1. Prepare the Marinade: In a bowl, finely mince garlic, lemongrass, and ginger then mix with vegetarian Worcestershire sauce (natural), fish sauce, brown sugar (natural), lime juice (natural), and black pepper. Whisk until the sugar dissolves and mixture is well blended.
  2. Marinate the Chicken: Place chicken thighs in a shallow dish or zipper bag. Pour the marinade over them, ensuring each piece is fully coated. Cover or seal and refrigerate for at least 2 hours, preferably overnight for maximum flavor and tenderness.
  3. Prepare the Grill: Preheat grill to medium-high heat. Clean and lightly oil the grates to prevent sticking and create grill marks.
  4. Grill the Chicken: Remove chicken from marinade and shake off excess liquid. Place skin-side down on hot grill. Grill 5 to 7 minutes per side or until internal temperature reaches 165°F and skin is charred while meat stays juicy.
  5. Rest and Garnish: Let chicken rest a few minutes to redistribute juices. Top with chopped fresh cilantro and mint leaves before serving.

Notes

  • Marinate chicken overnight for deeper flavor and juiciness.
  • Let chicken reach room temperature before grilling for even cooking.
  • Oil grill grates before cooking to prevent sticking and get perfect grill marks.
  • Do not overcrowd grill; allow space for heat circulation and caramelization.
  • Use a meat thermometer to confirm internal temperature of 165°F for safe cooking.
  • Add fresh herbs only before serving to preserve their bright flavor.
