Ingredients
Scale
Pasta
- 1 1/2 cups orzo pasta
- Salt, for boiling water
Fresh Vegetables
- 1/2 cup bell peppers, chopped
- 1/2 cup cucumbers, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onions, chopped
Protein and Cheese
- 4 slices smoked turkey bacon
- 1/2 cup plant-based cheese cubes or shreds
Dressing
- 2 tbsp lemon juice (natural)
- 3 tbsp extra virgin olive oil (natural)
- 1 tsp vegetarian Worcestershire sauce (natural)
- Salt, to taste
- Black pepper, to taste
Herbs and Seasonings
- 2 tbsp fresh parsley or basil, chopped
Instructions
- Cook the Orzo Pasta: Bring a large pot of salted water to a boil and add the orzo pasta. Cook it until al dente, usually about 8 to 10 minutes, following the package instructions. Drain and rinse under cold water to stop the cooking and cool the pasta for the salad.
- Prepare the Fresh Vegetables: While the orzo is cooking, chop the bell peppers, cucumbers, cherry tomatoes, and red onions into bite-sized pieces. Place them in a large mixing bowl.
- Cook and Chop the Smoked Turkey Bacon: Heat a skillet over medium heat and cook the smoked turkey bacon until crispy. Let it cool slightly before chopping into small pieces.
- Combine Ingredients: Add the cooled orzo pasta and chopped turkey bacon to the bowl with the vegetables. Toss in the plant-based cheese cubes or shreds and sprinkle the fresh herbs over the top.
- Make and Add the Dressing: Whisk together lemon juice, extra virgin olive oil, vegetarian Worcestershire sauce, salt, and pepper in a small bowl. Pour the dressing over the salad and gently toss everything until evenly coated.
Notes
- Do not overcook the orzo to maintain a firm texture.
- Chill the salad for at least 30 minutes before serving to allow flavors to meld.
- Add fresh herbs just before serving for vibrant aroma and flavor.
- Taste and adjust the dressing acidity and seasoning to your preference.
- For extra crunch, consider tossing in toasted nuts or seeds right before serving.
