Protein and Cheese

  • 4 slices smoked turkey bacon
  • 1/2 cup plant-based cheese cubes or shreds

Dressing

  • 2 tbsp lemon juice (natural)
  • 3 tbsp extra virgin olive oil (natural)
  • 1 tsp vegetarian Worcestershire sauce (natural)
  • Salt, to taste
  • Black pepper, to taste

Herbs and Seasonings

  • 2 tbsp fresh parsley or basil, chopped

Instructions

  1. Cook the Orzo Pasta: Bring a large pot of salted water to a boil and add the orzo pasta. Cook it until al dente, usually about 8 to 10 minutes, following the package instructions. Drain and rinse under cold water to stop the cooking and cool the pasta for the salad.
  2. Prepare the Fresh Vegetables: While the orzo is cooking, chop the bell peppers, cucumbers, cherry tomatoes, and red onions into bite-sized pieces. Place them in a large mixing bowl.
  3. Cook and Chop the Smoked Turkey Bacon: Heat a skillet over medium heat and cook the smoked turkey bacon until crispy. Let it cool slightly before chopping into small pieces.
  4. Combine Ingredients: Add the cooled orzo pasta and chopped turkey bacon to the bowl with the vegetables. Toss in the plant-based cheese cubes or shreds and sprinkle the fresh herbs over the top.
  5. Make and Add the Dressing: Whisk together lemon juice, extra virgin olive oil, vegetarian Worcestershire sauce, salt, and pepper in a small bowl. Pour the dressing over the salad and gently toss everything until evenly coated.
