Ingredients

Scale

For the Patties

  • 1 lb plant-based ground protein
  • 1/2 cup bread crumbs (whole wheat or gluten-free)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • Salt, to taste
  • Black pepper, to taste

For the Mushroom Gravy

  • 2 cups mushrooms (cremini or button), chopped
  • 2 cloves garlic, minced
  • 1 tsp natural gelling agent
  • 1 1/2 cups vegetable broth
  • 1/4 cup plant-based dairy milk or sour cream (plant-based)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (parsley, thyme), chopped for garnish

Instructions

  1. Prepare the Patties: In a large bowl, combine the plant-based ground protein, bread crumbs, finely chopped onions, garlic, vegetarian Worcestershire sauce (natural), salt, and pepper. Mix gently until all ingredients are evenly incorporated, being careful not to overwork the mixture. Shape into oval patties about half an inch thick and set aside for cooking.
  2. Cook the Patties: Heat a non-stick skillet over medium heat with a little oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set on a plate while you prepare the mushroom gravy.
  3. Make the Mushroom Gravy: In the same skillet, add the chopped mushrooms and sauté until softened and browned, releasing their earthy aroma. Stir in fresh garlic and cook for another minute. Sprinkle in the natural gelling agent gradually while stirring to prevent lumps. Slowly add vegetable broth and plant-based dairy, whisking constantly until the sauce thickens to a luscious consistency. Taste and adjust seasoning with salt and pepper as desired.
  4. Combine and Simmer: Return the cooked patties to the skillet, nestling them into the mushroom gravy. Cover and let simmer gently on low heat for about 5 minutes to allow the flavors to meld. Garnish with fresh parsley or thyme before serving for a pop of color and freshness.

Notes

  • Make sure your plant-based protein mixture is moist but firm enough to hold shape when forming patties.
  • Cook patties in batches if needed to avoid overcrowding the pan, which helps get a beautiful crust.
  • Browning mushrooms well adds deeper flavor to the gravy.
  • Add fresh herbs at the end of cooking to preserve their bright aroma.
  • Allow patties to rest a few minutes after cooking to retain juiciness.
